Alice! first of all this is such a great idea and
i already want to make your curry recipe :) i've been
kind of obsessed with Acorn Squash Pasta Sauce -
the recipe was online, but i modified it a lot so that
all the ingredients were things that were already in my
fridge/cupboard. who wants to walk to safeway and spend
money? It sounds a little 'different,' but it is yummy!

  • 1 small acorn squash, baked (or any squash -
i tried delicata and it was amazing)
  • 2 T. butter
  • salt and pepper
  • 4+ cloves garlic, roasted
  • italian spice (the original recipe calls
for parsley, i had a spice mix labeled 'italian,'
but anything like parsley or basil, or thyme would
probably be good)
  • 1/2 c. vegetable stock (water also works -
  1. if you let the sauce cook down for awhile it
doesn't hurt the flavor)
2.puree squash, garlic, and stock. Heat on stove,
melting in the butter and adding spices. Add salt
and pepper to taste. Serve over noodles.

Thank You Rachael! Im off to try it out.
